Can you introduce yourself and tell us about your role?

My name is Kilian Leduc and I have been the meat department manager at Leclerc Trélissac for four years. My role is to oversee the department's activities, both in the traditional section and the self-service area, ensuring product quality, traceability and economic performance.

Why did you upgrade your weighing systems?

We switched to new touchscreen weighing systems. The goal was clear: to simplify the work of our teams and increase efficiency on a daily basis.

How did your teams handle this new equipment?
Kilian Leduc |

Very easily. The systems are highly intuitive, to the point that anyone can use them quickly, without specific training. The interface is clear, understandable and pleasant to use, which facilitates adoption by the entire team.

What about the more technical aspects, such as day-to-day maintenance?

This is another real benefit. Changing a roll or performing routine tasks is much easier than with the old equipment. It is clear that these steps, often perceived as complicated, have been improved and simplified.

You also use a self-service solution. How does it work?
Kilian Leduc |

For self-service, we work with a networked automatic labeling group to create batches upstream using BizTrack software. In the morning, I create the batches from the carcasses received, entering the traceability number directly into the tool.

What concrete benefits does this bring on a daily basis?

BizTrack allows us to centralize all information related to the animal. We can edit a complete sheet with traceability data, which is then automatically transferred to the tray. Consumers can clearly identify the origin of the product thanks to the batch number printed on the packaging.

Does this traceability also have an impact on shelf management?
Kilian Leduc |

Yes, definitely. The solution is also very useful for monitoring carcass yield. As a manager, it allows me to analyze margins, identify areas for improvement and make full use of BizTrack's features to better manage the department's economic performance.

How do you tailor these solutions to customer expectations, both in traditional stores and in self-service?

In traditional stores, we have a close relationship with customers. They expect advice, service and accurate information about the origin and cuts of meat. Tools help us meet this demand.

In self-service area, the logic is different: customers often have little time and want to shop quickly. They choose trays that have been prepared in advance by the team. Here again, clear information and reliable traceability make all the difference.
